My Version of Busch’s She Crab Soup

  • 8 T. butter
  • 8 T. flour
  • 1 tsp. salt
  • 4 T. minced shallot
  • 4 T. dried parsley
  • 4 cups half and half
  • 1/2 tsp. fresh ground nutmeg
  • 1/2 tsp. old Bay seasoning
  • 5 T. sweetened condensed milk
  • 2 cups jumbo lump crab meat

  • Melt butter on medium heat in pot. Add shallots and saute until golden. Add flour and salt, stir until incorporated, add seasonings and parsley. Slowly whisk in half and half and sweetened condensed milk. Cook for about 10 minutes. After soup mixture is thick, gently fold in crab meat. Heat through and let the memories of this soup bring a smile to your face.
  • I spent 4 days trying to perfect this recipe. I had my family taste test all the recipes. This is the recipe that they all agreed was the BEST. If you like it a little thinner, add extra half and half. Enjoy!!
